Loaded Protein Quesadilla

This Loaded Protein Quesadilla is one of those meals you’ll keep coming back to—quick to make, incredibly satisfying, and packed with flavor. It’s perfect for an easy lunch, dinner, or a simple meal prep option when you want something both delicious and filling.

Ingredients (4 servings)

  • 4 large tortilla wraps

  • 400 g ground beef

  • Burrito seasoning

  • 150 g Black beans

  • 100 g Corn

  • Salsa

  • Jalapeños

  • 1/2 Red onion

  • 9 pcs Cherry tomatoes

  • 150 g Shredded cheese

  • Cheese dip

Directions

1. Prepare the filling

Start by browning the ground beef in a pan over medium heat until fully cooked. Add the burrito seasoning, black beans, corn, and salsa. Mix everything well and let it cook for a few minutes so the flavors combine and the mixture heats through.

2. Prepare the tortilla

Heat a clean pan with a small amount of oil and place the tortilla in the pan. Using a knife, cut a slit from the center of the tortilla to the outer edge. This will allow you to fold it into sections.

3. Add the fillings

Divide the tortilla into four sections and add the fillings (see step-by-step images below:

  • shredded cheese

  • beef mixture with jalapeños

  • chopped red onion and cherry tomatoes

  • cheese dip

4. Cook the quesadilla

Cover the pan with a lid and cook on medium heat until the tortilla becomes golden and slightly crispy, and the cheese starts to melt.

5. Fold and finish

Fold one section over the next, continuing until the tortilla is fully folded into a layered quesadilla. Cook briefly on both sides until crispy on the outside and fully melted on the inside.

Optional:

Top with extra shredded cheese before serving. For a milder version, simply leave out the jalapeños.
